材料(2–3人)

  • 長型或圓茄子 3–4條
  • 橄欖油 2大匙
  • 粗鹽、黑胡椒
  • 刷醬(可選):味噌2大匙+蜂蜜1大匙+蒜蓉1小匙+芝麻油少許
  • 配料:蔥花、芝麻、柚子皮屑或辣椒粉

做法

  1. 茄子洗淨擦乾,整條不切,表面劃幾道斜刀。刷油+鹽胡椒。
  2. 炭火分高溫區/低溫區。
  3. 高溫區轉動烤 8–12分鐘,直到皮完全焦黑、筷子能穿透
  4. 移低溫區續烤 3–5分鐘
  5. 起鍋稍涼,剝掉焦皮(或保留少量更煙燻)。
  6. 刷味噌蜂蜜醬或淋橄欖油+檸檬汁,灑蔥花芝麻。

💡 越黑越好。想更濃煙燻 → 鋁箔包悶 5 分鐘。
